Our kids are not breakfast people. We used to argue with them and run after them with food just so they could eat. We would even make a couple of different foods to give them some choices because we wanted to make sure they ate. Well, nothing worked. So we eventually just gave up and decided that they would eat when they’re hungry.
This morning, just like any other morning, I got up to make breakfast for the kids. It’s National French Toast Day so I wanted to seize the day. As I was making it, all I could think about what a waste this was going to be because I knew the kids weren’t gonna eat it. I took out the strawberries and of course they went bananas! They love fruit. I told them it was going to be inside their breakfast and they got excited. I went ahead and started plating their food and the first thing Hailey says, “Mom that looks so beautiful!” So, I guess it’s true what they say about eating with your eyes first, huh? To my surprise, they ate every last bit of it!
I will definitely be making more French Toast from now on and since this was a hit in our house, I’d like to share it with you. Now, this isn’t your typical French toast. It’s Strawberry Shortcake French Toast. I know sounds amazing, right? What are you waiting for? Check out the recipe below!
Strawberry Shortcake French Toast
- 8 slices bread
- 10 starwberries sliced
- 1/4 cup cream cheese
- 4 eggs
- 1/2 cup milk
- 1/4 tsp cinnamon
- 2 Tbsp butter
- 1/4 tsp orange zest
- powdered sugar for topping
- whipped cream
Combine the milk, eggs, cinnamon, and orange zest in a bowl and whisk together.
Lay out the slices of bread and put a layer of cream cheese on four slices. Next, place strawberries over the cream cheese.
Heat the butter in a frying pan, over medium.
While the frying pan heats up, put the slices of bread with the cream cheese together with the empty ones to make a sandwich.
Once the butter is melted, dip the sandwiches into the egg mixture and put onto the frying pan. Let it fry on each side for about 3-4 minutes.
Place the French Toast on a plate. Cut and serve with powdered sugar, whipped cream, and strawberries. Enjoy!
