We LOVE cooooookies and these Cookie Monster Rice Krispie Treats are such a fun twist on the plain ol’ boring rice cereal treats that we are all used to! They are ridiculously easy to make, but leave the kids in awe! Whip up a batch for a birthday party or just for fun – here’s how!
9oz box of crisped rice cereal (or 9 cups if you have a bigger box)
6 cups of mini marshmallows (it’s equivalent to 1 and a half 10 oz bags)
5 Tbs butter
1 pea sized dab of royal blue gel food coloring
1 cup of mini sandwich cookies (or chop up some regular ones, I won’t tell)
1 cup of mini chocolate chip cookies (your secret will be safe with me if you choose to chop up regular sized ones for this as well)
1 package of small candy eyeballs (can be found at most mass box retailers in the party aisle)
Spray a 9×13 pan with nonstick cooking spray and set aside.
Dump cereal in a large bowl (I mean big, really big).
In a medium sized pot over medium low heat, begin melting your butter.
When butter is mostly melted, add in your marshmallows.
Make sure you stir continuously until they are fully melted to prevent burning.
When everything is nice and melted, add your food coloring and mix it really well.
If you think the color looks too light, add more. Heck, even if you think it looks just right, add a touch more. It lightens up a bit when you add it to the cereal.
Next, pour your melted marshmallow mixture over your cereal and start combining it all together. Try to move quick, we still have to add the cookies! (Go ahead and add them now.)
When it’s all mixed really well, dump it into your prepared 9×13 pan. Sprinkle the candy eyeballs on top and press them in.
Let cool, cut and enjoy!!
