These last couple of weeks leading up to the holidays can be quite stressful. Getting the last-minute gifts, finding the perfect PJ’s for the kids, and sending our holiday cards is just a lot to get done in such a short period of time. With all of this going on, life doesn’t stop. We continue to add to our plate but we have to get through it somehow, right?
If I had to pick something that took the most time out of my day, it would be cooking. Therefore, I like to make sure that my meals are quick and easy so that I have time to get ready for the holidays. I want to be able to enjoy this time and make memories with my family.
Fortunately, I have found a perfect meal that allows me to have time to finish my holiday shopping, build gingerbread houses, and bake cookies with the kids. These Baked BBQ Chicken Bites are awesome if you’re looking for something quick, easy, and yummy for the entire family!

Baked BBQ Chicken Bites
- 2 lbs boneles skinless chicken breasts cut into bite-sized pieces
- 1 cup all purpose flour
- 5 cups corn flakes cereal crushed
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 2 large eggs
- 1/4 cup milk
Honey BBQ Sauce
- 3/4 cup Sweet Baby Ray BBQ sauce
- 1/4 cup honey
- 1/4 cup Ketchup
Begin by preheating the oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper and set aside.
In a large bowl, combine corn flakes, salt, pepper, garlic powder, and smoked paprika.
In another bowl, place chicken and add flour. Mix until all the pieces are covered in flour.
In a small bowl, whisk the eggs and milk together. Set aside
Next, dip each piece of chicken into the egg mixture and then into the cereal mix.
Shaking off all the excess, place on the baking sheet. Repeat until all the pieces are on the baking sheet.
Bake for 9 minutes, turn over and bake for another 9 minutes.
While the chicken is baking, you can begin making the sauce.
Mix all the ingredients in a small pot and heat over medium, whisking occasionally.
When the chicken is done, place into a large bowl and pour the sauce over it. Gently combine and serve.
